In life, there are three (3) kinds of people: those who can't live without breakfast, those who can't bear to eat breakfast, and those in the middle. I'd like to count myself as one who belongs to "those in the middle". I haven't exactly taken up the habit of waking up early. My alarm clock has always been the sunlight streaming through my window. When given the choice between having breakfast and coming to work on time, I'd choose the latter. During those days, I'd just ask my "housemate" to prepare for me a breakfast sandwich that I can munch on on the way to work or during the morning break.
So for my first blog entry on this page, I've decided to share with you my top 3 favorite breakfast sandwiches, starting with my favorite.

1. Corned beef hash I use Purefoods canned corned beef for this. Just sautee white onions (1 small onion cut into rings), minced garlic (I always use 3 cloves), and minced potatoes (1 small piece, about 2.5 inches in diameter) in a tablespoon of olive oil. When the potatoes have cooked halfway through and when the onions have caramelized and the garlics have just begun to turn golden, add the canned corned beef and stir. Lower the heat to let it simmer. You may add some water if it starts to dry up and your potatoes haven't cooked yet. When potatoes are done, then it's done. Slathering on a slightly toasted wheat bun or sliced loaf (I love my sandwiches toasted) then wrap in wax paper or foil. |
2. Salami, lettuce, tomato and cheese (SLTC) This is quite self-explanatory, but I'd like to share that I use Purefoods Salami (I have yet to try King Sue's) --- no need to cook, just warm for a while on the toaster. To assemble, place some Lite Mayo on each loaf slice, then stack the salami (1-2 pieces), shredded iceberg lettuce leaves, 2 slices of ripe tomato, and tiny thin slices of filled or cheddar cheese. Again, toast it for 2-3 minutes then wrap. |
3. Salami French Toast
I have always loved making french toasts ever since I found the recipe in a children's book back when I was still in Grade 3. Since we didn't have ready access to fresh milk back then, I got used to making them without milk. But nowadays, since my kids love having cereals for breakfast, there's usually milk in the fridge. How to do this?
You'll need: 1 large egg, salt and pepper to taste, 2 tbsp milk, slices of day(s)-old bread (I slice them in halves to form triangles, as per family tradition), butter for frying and salami.
First, warm the salami slices. On one side of each bread slice, spread a thin layer of Lite Mayo (I use Lady's Choice). Place a salami slice on top of one and cover with another bread slice. It's up to you if you want more layers of bread and salami, but I usually use 2 bread slices.
Then, prepare the french toasts. Beat the egg with salt, pepper and milk. Dip the salami sandwich in the egg mixture, including the sides to help seal it in. Then fry with a little butter for taste on a non-stick pancake fryer on low heat. Turn when golden brown. Also fry the sides. Wrap.
P.S. Sometimes, the kids just want plain french toasts. So just skip the salami part and fry each slice of bread after dipping in the egg mixture. Then serve with honey or confectioner's sugar or jam (my kids love the Mango Pineapple jam), or everything.
P.P.S. My eldest son has been cooking french toasts since he turned 8 years old. What can I say about tradition, huh?
